Chocolate Dulce de Leche Lava Cake (7 portions)
April is here and Easter in on the way! A reader asked me for a chocolate dessert with some Latin flavour infused. This is my twist in this decadent recipe: Chocolate Lava Cake with a warm and delicious Dulce de Leche center. I bet you haven’t had that just yet! Easy to make and you can make ahead, freeze and bake when it’s time to serve.
140g Dulce de Leche (thick, not thin) Coco Powder
100g Chopped Dark Chocolate
1⁄2 Can Condensed Milk 1⁄2 Cup All Purpose Flour
With a tea spoon make 7 portions of the Dulce de Leche and roll each one at the cocoa powder, making little balls. Leave in the freezer.
Use a glass bowl to melt the dark chocolate and the butter on the microwave (or double boiler) 40 seconds at a time, stir and add 40 seconds, until melted. Set a side.
In the mixer, beat eggs, condensed milk and flour, until pale in yellow color. Add the melted chocolate and mix for another minute.
Grease and sprinkle cocoa powder 7 individual ramekins (7,5cm diameter x 5cm high) or cupcake baking trays will do. Scoop some of the batter, leaving 1⁄2cm of the border, and distribute the Dulce de Leche balls.
Preheat oven to 350F. Bake about min, until sides are cooked and center still soft.
This recipe is so good that you can freeze and bake later. Just make sure to cover well the unbaked ramekins. Bake from frozen on a preheated oven to 400F for about 13-15min. Now remember that each oven in different and do not want your lava cake overcooked. As long as the sides are cooked, you are good to go!
